Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s specialities are Araicha Masala Fish Fry, Kozhi Roast and Muttai Kozhi Pirattal presented by celebrity chef Pazhani Murugan.

Araichha Masala Meen Fry

Ingredients :

Vanjaram Fish, pepper, fennel seeds, grated coconut, small onion, tamarind paste, turneric powder, egg, dried red chilli, coconut oil, salt.

Method Of Preparation :

Dry roast dried red chilli, fennel, pepper, grated coconut, curry leaves, small onions.
Grind into a paste by adding water.
Add tamarind paste and turmeric powder.
Mix well and add beaten agg.
Mix together and coat the fish with this mixture
Marinate for an hour.
Heat coconut oil in a pan.
Shallow fry the marinated fish.
Araicha Masala Fish Fry is ready to serve.

Kozhi Roast :

Ingredients :
Chicken, ginger-garlic paste, turmeric powder, lemon juice, cinnamon, cloves, cardamom, coriander seeds, cumin, fennel seeds, dried red chilli, pepper corn, curd, chat masala, curry leaves, oil, salt.

Method Of preparation :

In a bowl, add ginger-garlic paste, turmeric powder, salt, lemon juice.
Mix well and marinate the chicken,
Dry roast cinnamon, cloves, cardamom, coriander seed, cumin, fennel seed, dried red chilli, pepper corn.
Grind into a masala powser.
Add to the chicken and mix.
Add curd, chat masala, curry leaves.
Mix and marinate for half an hour.
Heat oil in a pan and roast the chicken.
Kozhi Roast is ready to serve.
