Vadai Set and Dahi Pappadi Chaat, presented by celebrity chef Meena Sudhir.

Raguda Patties

Boiled peas, boiled potato, onion, green chilli, ground nut, dates, tamarind paste, jaggery, coriander powder, red chilli powder, amchur powder, omam powder, mint powder, salt, oil.

Method Of Preparation:
To prepare meeta chutney, grind soaked dates, tamarind, jaggery, chaat masala, cumin powder together.
To prepare mint chutney, grind mint leaves, green chilli, lemon juice, salt, sugar, roasted ground nut together.
In a bowl, mix mashed potatoes, salt and pepper together.
Heat oil in a pan, add ginger-garlic paste, onion paste, tomato paste and saute.
Add boiled peas, red chilli powder, cumin powder, amchur powder, salt, water and boil well.
Make the potato mixture into small patties.
Heat little oil in a pan and fry the patties on both side.
Place them on a serving plate, pour the peas gravy on top.
Add chopped onions, meeta chutney, mint chutney, ompodi, coriander leaves, chaat masala on top of it.
Garnish again with onions and serve.

Thattuvadai Set
Thattai, onion, tomato, carrot, beetroot, grated coconut, grated mango, garlic, red chilli flakes, lemon, coriander leaves, mint chutney.

Method Of Preparation:
Grind tomato, garlic, red chilli powder, lemon juice and salt in a mixie to prepare the tomato chutney.
In a bowl add the grated vegetables, salt, lemon juice and mix together.
In another bowl add the grated coconut, mango and mix together.
In a serving plate, first place the thattai spread with tomato chutney.
Add the vegetable mixture and then the coconut mixture on top of it.
Close it with a thattai spread with mint chutney.
Garnish with ompodi and coriander leaves.

Dahi Pappadi Chaat

Pappadi (thattai ), boiled potatoes, curd, meeta chutney, pudina (mint )chutney, chaat masala, cumin powder, red chilli powder, sugar, ompodi, coriander leaves, salt.

Method Of Preparation:
In the serving bowl, spread the small pieces of thattai first.
Then add small pieces of boiled potato on top.
Mix salt with the curd and add it next.
Follow it with the meeta and mint chutney.
Then add the chaaat masala, cumin powder, red chilli powder, sugar.
Add ompodi and finally chopped coriander leaves.
