Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s recipes are Onam specialities like Kalan, Thoran, Adai Pradhaman and Nendrankai Chips cooked by chef Palani Murugan.

Kalan
Ingredients:
Karunai kizhangu, raw banana, green chilli, grated coconut, curd, lemon juice, dried red chilli, cumin, fenugreek, mustard, red chilli powder, turmeric powder, pepper, fenugreek powder, curry leaves, salt, coconut oil.
Method Of Preparation:
Boil water in a pan and cook karunai kizhangu first.
Then add raw banana, lemon juice, pepper and keep aside.
In a mixie jar add grated coconut, green chilli, curd, cumin and grind well.
Heat oil in a pan and temper with mustard, dried red chilli, curry leaves.
Add cooked karunai kizhangu and raw banana and season with red chilli powder and turmeric powder.
Add the ground masala and mix well.
Next add the curd, asafoetida powder, salt, fenugreek powder and mix together.
Remove from heat and serve hot.

Thoran
Ingredients:
Carrot, beans, onion, green chilli, dried red chilli, grated coconut, turmeric powder, asafoetida powder, mustard, urad dal, curry leaves, salt, coconut oil.
Method Of Preparation:
Heat oil in a pan and temper with mustard, urad dal, dried red chilli, curry leaves.
Add green chilli, onion, beans, carrot, turmeric powder.
Saute, cook well and season with salt and asafoetida powder.
Finally add grated coconut, mix together and serve.

Adai Pradaman
Ingredients:
Kerala adai, jaggery, coconut milk, cashewnuts, cardamom powder, ghee.
Method Of Preparation:
Heat ghee in a pan, fry cashewnuts and add second time strained coconut milk and Kerala adai.
Add boiled and strained jaggery, cardamom powder and first time strained coconut milk.
Bring it to boil and remove from heat.

Nendrankai Chips
Ingredients:
Nendrankai, salt, turmeric powder, coconut oil.
Method Of Preparation:
Slice nendrankai into thin slices.
Heat oil, deep fry the nendrankai.
Add turmeric powder and salt to it.
Remove when brown and crispy.
