Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today‚Äôs specialities are Thalicha Appam and Meen Kuzhambu prepared by chef Rajmohan. Meena Sudhir presents a crispy kid’s snacks Baby Corn Pakoda .

Thalicha Apam

Raw rice, grated coconut, boiled rice, baking soda, ginger, green chilli, small onion, carrot, beans, mustard, cumin, salt, oil.
Method Of Preparation:
Soak raw rice for 5 hours, add grated coconut, boiled rice and grind into a batter.
Leave it for 4-5 hours to ferment, add baking soda, salt and keep aside.
Heat gingelly oil in a pan and temper with mustard, cumin.
Add chopped small onions, curry leaves, chopped ginger, green chilli, carrot and beans.
Saute well and mix with the batter.
Prepare the apam in an apam pan with the lid closed and on simmer.
Serve hot.`

Kumili Meen Kuzhambu

Fish, raw mango, grated coconut, small onion, green chilli, ginger, garlic, red chilli powder, coriander powder, turmeric powder, cumin, mustard, fenugreek, curry leaves, salt and oil.
Method Of Preparation:
Mix grated coconut, curry leaves, small onions, garlic, red chilli powder, coriander powder, cumin, turmeric powder in a bowl.
Grind this in a mixie and add it to a heated pan.
Add water, raw mango, salt and bring it to boil.
Then add fish, water and cook with the lid closed.
Heat oil in a seperate pan and temper with mustard and fenugreek.
Saute small onion, green chilli, ginger, curry leaves well and add it to the gravy.
Serve hot.

Baby Corn Pakoda

Baby corn, Happima Crispy Mix, Oil.
Method Of Preparation:
Half cook baby corn in hot water for 2 minutes.
Make half of the Happima mix into a batter with water.
Spread the other half on a plate.
Dip the baby corn in the batter, coat it with dry Happima mix and deep fry in oil.
Serve hot.
