Sarkarai Pongal


Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s specialities are Sarkarai Pongal and Aval Halwa, presented by chef Pazhani Murugan.

Sarkarai Pongal

Ingredients:
Rice, jaggery, sugar, split green gram (paasi paruppu/moong dhal), milk, grated coconut, cashew nut, cardamom powder, salt, ghee.
Method Of Preparation:
In a cooker, heat ghee and fry moong dhal.
Add water, rice and milk.
Cook with the lid closed.
Open, add jaggery, sugar and keep aside.
In a pan heat ghee, fry the cashew nuts and grated coconut.
Add to the cooked rice, moong dhal and jaggery mixture.
Mix well and add salt and cardamom powder.
Cook with lid closed for 4 minutes and remove from heat.
Sarkarai Pongal is ready to serve.

Aval Halwa

Ingredients:
Aval, milk, sugar, maida, cardamom powder, cashew nuts, dried grapes, ghee.
Method Of Preparation:
Soak aval in boiled milk for 5 minutes.
In a pan heat ghee, fry the cashew nuts and dried grapes.
Add the soaked aval and let the milk evaporate.
Add the sugar and bring it to boil.
Add cashew nuts, dried grapes and cardamom powder.
In a pan, heat ghee and add maida.
Pour this mixture into the cooked aval.
Mix well and remove from heat.
Aval Halwa is ready to serve.
