Ney Appam – Ghee Appam

Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s specialities Vinayagar Chathurthi delicacies like Mothagam,Kara Kozhukattai, Ney Appam and Ellu Urundai presented by chef Pazhani Murugan.

Mothagam and Kara Kozhukattai

Kozhukattai flour, grated coconut, jaggery, bengal gram, cardamom, urad dal, mustard, ghee.
Method Of Preparation:
Boil water and add it gradually to the kozhukattai flour.
Make it into a dough and keep it aside.
Heat a tawa, add grated coconut, ghee, cardamom powder, jaggery and mix well.
Take small portion of dough, roll it with ghee and stuff the sweet mixture inside.
Make mothagams by pressing it in a mothagam mold.
Heat ghee in a pan, temper with mustard seeds and urad dal.
Add green chillies, curry leaves, cooked and coarsely ground bengal gram, grated coconut and mix well.
Make kozhukattai in a mold, by stuffing this mixture.
Steam mothagam and kozhukattai in a pressure cooker and serve.

Ney Appam

Raw rice, jaggery, urad dal, cardamom powder, ghee.
Method of Preparation:
Soak rice and urad dal for an hour.
Grind along with jaggery and make a batter.
Add cardamom powder and cook the appam in a paniyaram pan with ghee.
Ney appam is ready to serve.

Ellu Urundai

Ellu (black sesame seeds), jaggery.
Method Of Preparation:
Roast black sesame seeds in a pan.
Grind it in a mixie together with jaggery.
Make it into small round balls and serve.
