Brinjal Masala

Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s specialities are Italian Pasta and France Brinjal (Aubergine) Masala, prepared by chef Pazhani Murugan.

Italian Pasta

Penne pasta, tomato, onion, carrot, beans, green peas, garlic, tomato sauce, chilli flakes, parsley, basil leaves, bay leaf, brown sugar, pepper powder, olive oil, salt.
Method of Preparation:
Heat olive oil in a pan, add chopped garlic, bay leaves and saute.
Add chopped onion, carrot, beans and peas.
Then add blanched, skin peeled, deseeded and chopped tomato.
Pour tomato sauce, brown sugar and stir.
Add cooked pasta and mix well.
Add parsley, basil leaves, salt, chilli flakes and pepper powder.
Finally drizzle olive oil, sprinkle cheese and serve hot.

France Brinjal ( Aubergine ) Masala

France brinjal (aubergine), onion, capsicum (yellow, green, red), tomato, garlic, tomato sauce, seemai surakai (Zucchini), parsley, basil leaves, Italian seasoning, pepper powder, salt, olive oil.
Method of Preparation:
Heat olive oil in a pan, add chopped garlic and saute.
Add round shaped thinly sliced brinjal and saute till half cooked.
Then add onions, three colour capsicums, tomato and seemai surakai( Zucchini).
Pour tomato sauce, season with parsley, basil leaves, Italian seasoning and salt.
Add some water, pepper powder and drizzle extra virgin olive oil.
Mix well, sprinkle cheese and serve hot.
