Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s specialities are Kadal Unavu Biriyani and Chinese Chicken made by chef Pazhani Murugan.

Kadal Unavu Biriyani

Basmati rice, prawn, Vanjiram fish, squid, onion, tomato, green chilli, ginger-garlic paste, red chilli powder, garam masala, curd, turmeric powder, lemon juice, cinnamon, cloves, cardamom, star anise, rose water, mint leaves, coriander leaves, salt, butter, ghee, oil.
Method Of Preparation:
Heat oil in a pan, temper with cinnamon, clove, cardamom and star anise.
Add green chilli, onion and saute till it turns golden brown.
Add ginger-garlic paste, tomato, mint leaves, coriander leaves, turmeric powder, red chilli powder, garam masala, curd, salt and saute well.
Add water and close the lid and cook.
Heat ghee in a pan, add ginger-garlic paste and all the sea food.
Saute well and add mint leaves, coriander leaves, turmeric powder, red chilli powder, garam masala, salt, lemon juice, rose water.
Saute and keep aside.
Add soaked basmati rice to the boiling gravy.
Add the sea food masala, after the water evaporates.
Keep it on dum for 20 minutes, add ghee and serve hot.

Chinese Chicken

Chicken, corn flour, maida, onion, egg, green chilli, garlic, ginger, cashew nut, tomato sauce, soya sauce, vinegar, chilli flakes, spring onion, salt, oil.
Method Of Preparation:
In a bowl mix corn flour, maida, salt, egg and water into a batter.
Add boneless chicken, mix and deep fry in oil.
Heat oil in a pan, add cashew nuts, chopped ginger, chopped garlic, chopped green chilli and onions and saute.
Add water, tomato sauce, salt, vinegar, soya sauce and stir well.
Add the fried chicken, chopped spring onion, chilli flakes.
Toss it together and serve.
