Kitchen Galatta is a cookery show which presents a variety of delicious, mouth watering and healthy food prepared by celebrities and chefs. Today’s specialities are Keerai Kadalai Maavu Roti, Mughal Vegetable Kurma and Babycorn Fried Rice presented by chef Pazhani Murugan.

Keerai Kadala Maavu Roti

Ingredients:
Wheat flour, besan flour, pasalai keerai, onion, green chilli, red chilli powder, turmeric powder, garam masala, omam, salt, ghee.
Method Of Preparation:
In a bowl add wheat flour, besan flour, red chilli powder, turmeric powder, garam masala, omam, chopped onion, chopped green chilli, chopped keerai and ghee.
Add water and knead into chappathi dough.
Take small portions, roll and make chappathis in a tawa with ghee.
Serve hot.

Mughal Vegetable Kurma

Ingredients:
Onion, beans, carrot, cauliflower, green chilli, capsicum(yellow, green, red), green peas, mushroom, cashewnut, almond, sugar, red chilli powder, coriander powder, garam masala, cumin powder, fresh cream, salt, oil, ghee.
Method Of Preparation:
In a bowl of water, cook the vegetables with salt.
In another bowl of water add onion, green chilli, almond, cashewnut and boil well.
Cool it and grind into a paste.
Heat oil in a pan, add ginger-garlic paste, turmeric powder, red chilli powder, coriander powder, cumin powder and the ground paste.
Season with salt and saute.
Heat ghee in a seperate pan, temper with cinnamon, cloves, cardamom, bayleaves and add three colour capsicums, mushroom and the cooked vegetables.
Saute and then add this to the gravy.
Mix well and finally add garam masala and fresh cream.
Remove from heat and serve.

Baby Corn Fried Rice

Ingredients:
Baby corn, capsicum ( red, green, yellow ), coriander leaves, Happima fried rice mix, basmati rice, oil.
Method of Preparation:
Heat oil in a pan, saute babycorn well.
Saute the three coloured capsicum and add the boiled basmati rice.
Add Happima fried rice mix, coriander leaves and saute.
Serve hot.
